AGUSTIN BALBI

Born into a Spanish-Italian family, Agustín Balbi discovered his passion for cooking early in life. He trained at BUE Trainers and began his career in restaurants in Buenos Aires, later moving to New Orleans, and eventually to Tokyo, where he honed his craft for several years. In 2015, he was named one of the 10 Best Young Chefs in Japan by San Pellegrino.

In 2016, he relocated to Hong Kong to lead operations at HAKU, a restaurant awarded three Michelin stars. In 2019, he was recognised by La Liste as the World’s Best Young Talent and debuted at number 87 in The Best Chefs in the World.

Shortly after, he opened Andō, his own restaurant, which has held a Michelin star since 2021 and has been featured in Asia’s 50 Best, OAD, the Top 100 Chefs Awards, Tatler Dining Hong Kong, and the prestigious Black Pearl Guide 2023.
