CARITO LOURENÇO & GERMAN CARRIZO

Carito y Germán llegaron a Valencia en 2006, con acento argentino y una mirada compartida sobre la cocina como lenguaje. Casi dos décadas después, siguen trabajando juntos —en lo personal y en lo profesional— construyendo un camino sostenido por la complicidad, la curiosidad y el deseo de transformar la cultura gastronómica.

In 2021, they earned their first Michelin star with Fierro, the restaurant they founded and lead. Carito, director and creative soul, drives a Mediterranean cuisine of personal authorship, shaped by her Latin American roots and the richness of the Spanish pantry. Germán, her partner in life and in work, is the conceptual engine: free-spirited, inquisitive, and deeply focused on the creative process.

Today, they run Tandem Gastronómico, their consulting company, through which they manage new projects and support the development of others. They are behind Doña Petronaa casual Argentine restaurant; La Oficina, a casual dining concept centred on local ingredients; and Maipi, a beloved Valencian bar they revived and continue to keep alive without losing the essence that has defined it for nearly fifty years.

From perspectives that are different yet complementary, they design a culinary vision that flows between the technical and the emotional, the rooted and the migratory, the personal and the collective.
